“Cold-water langoustines from Scotland have such a delicate flavour, and I wanted to showcase that quality in the simplest, most indulgent way. Pairing them with a rich garlic butter felt natural – it’s a starter that’s elegant, warming, and perfect for winter evenings.”




Seared Scallops with Cauliflower and brioche purée, apple gel, herb oil
“Scallops bring a natural sweetness, which I’ve balanced with a creamy cauliflower and toasted brioche purée. The apple gel adds brightness, while the herb oil brings colour and freshness – it’s a dish that layers comfort with vibrancy.”
Duck Confit Soubise sauce, winter greens, rosemary
“Rooted in rustic winter suppers, this dish is about depth and tradition. The duck confit is slow-cooked in its own fat until perfectly tender, then paired with a soubise onion sauce and earthy greens. The touch of rosemary brings an aromatic finish – comforting yet refined.”
