MEET REGIS

Having begun his career in France working in boulangeries, patisseries and Michelin-starred restaurants, Regis, Group Executive Pastry Chef, has been crafting delicacies – from Victoria Sponge to Kaiserschmarrn – for over four decades, including stints all around the globe.

He joined The Wolseley as Head Pastry Chef in 2005 with a wealth of experience under his belt, soon becoming known for his attention to detail creating Wolseley classics including Battenberg and Sachertorte in the Grand European Café tradition. Now Regis heads up pastry development across our restaurant group, overseeing everything from croissants to à la carte desserts.

The Delaunay’s afternoon tea menu allows Regis the opportunity to deliver a selection of seasonally rotating trusty favourites, each with an emphasis on tradition and pared-back style.

“Being a pastry chef is a balance between maths and art. Everything is weighed out to the exact gram, and the method must be consistently applied. But at the same time, the finished product needs to contain an air of fantasy. That’s the beauty of this craft”
Regis Negrier
